Freeze-dried food products are products and dishes made by using a process called lyophilization or freeze-drying, in which water is removed from perishable products to extend shelf life or make the product more convenient for transport.  Lyophilization or freeze-drying works by freezing the food product, then reducing the pressure and adding heat to allow the frozen water in the product to sublimate. Because freeze-drying helps to maintain the physical structure of the raw food product, freeze-dried food products taste, smell, and look like fresh products. By the way, freeze-dried products retain almost all of their nutrients throughout the freeze-drying process. Also, due to elimination of water through the freeze-drying process removes the potential for bacterial growth. The decreased potential of bacterial growth ensures that freeze-dried food products have a very long shelf life.  Their flavor and nutrition values can remain as good as the day they were freeze-dried for years and even decades. However, the shelf life for each freeze-dried food product depends on the packaging, room temperature, and the product itself.  Also, when the water is removed from the foods, their mass decreases with no difference in volume.  Because of the lighter weight, freeze-dried food is easily portable. By the way, freeze-drying is suitable for individual food and whole dishes with multiple ingredients, for instance, stews or soups.  Finally, freeze-dried dishes can be prepared easily and quickly because it only requires adding hot or cold water and waiting for a few minutes.
