Best and worst restaurant inspection reports for the week ending July 27, 2021
The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

Reasons including person in charge does not demonstrate control over foodborne illness risk factors at time of routine inspection. Multiple low boy and reach in coolers holding foods above 41°F. Coolers holding TCS foods overnight ranging from 50-70°F. Embargoed one pound of raw chicken, one pound of carne, one pound raw shrimp, one pound sliced tomatoes. Numerous prepped/cooked date marked TCS foods held past 7 day shelf life. Numerous frozen TCS foods left out to thaw at room temperature in back storage area. Insect activity observed in rear storage area during routine inspection. Dirty product pans stored in cold holding drawers under hot top.

Cockroaches noted in dishwashing area and prep areas. Wet wiping cloths stored on working surfaces and not in sanitizer solution. Wastewater leak noted at sanitizing compartment at triple sink. Over-accumulation of recyclables noted in refuse area. Floors dirty behind/underneath equipment.

Items not re-heated adequately for hot holding. Multiple coolers holding above 41F. Discarded 0.5 lbs sour cream, 0.3 lbs toms, 0.2 lbs cut lettuce, 0.2lbs slaw. Baked beans covered in walk-in at 72F. Condensation observed on the lid. Missing thermometers in multiple coolers. Pan lid in poor repair. Lower shelves in poor repair. Leak at hand sink faucet.

Proper cooling method not provided for Tofu cooling in walk in cooler unit. Thermometer in cooler unit not accurate. Clean glassware stored on dirty linens. Excessive heat noted in kitchen and food prep areas.

Containers in reach in fridge, has waffle batter and other ingredients has water on top of lids from condensation dripping from inside top of cooler. Inside ice machine soiled. White knife handles rough old build up on handle. Gap at counter underneath coffee cups has old spillage accumulated. Ice guard inside machine has mildew build up.
