The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

Reasons including adequate active managerial control not provided at time of inspection. Adequate hand-washing not observed during inspection. Adequate cleaning/sanitizing frequency not provided for food and non-food contact surfaces. Build up of food debris noted on kitchen equipment throughout establishment. Eggs holding in ice bath on cookline at 52*F. Must be 41*F or below. Uncovered/unprotected food items in walk in cooler. Soiled wiping cloths not properly stored in dry storage area. Clean dishes stacked wet. Dried food debris noted on clean dishes. Floors dirty behind/underneath equipment.

Reasons including raw fish stored on a plate above ready-to-eat foods in lowboy cooler. No sanitizer in dish machine. Multiple foods with no date mark in walk-in cooler. Frozen fish thawing at room temperature. Active insects found in dish machine area. Inside of ice machine dirty.

Reasons including pizza oven conveyer belt with heavy food debris build-up. Observed heavy food debris build-up on top of the pizza oven as well with dishes stored as clean being stored on top of food debris. Several TCS foods in walk-in cooler that were being kept past the 7 day date mark on the containers. Food service employee preparing food without wearing a hair restraint. Heavy grease accumulation on hoods vents and the vent covers in the walk-in cooler. Live roaches in parts of the kitchen.
