Best and worst restaurant inspection reports for the week ending Nov. 16, 2021

The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

To file a health-related complaint, call the Department of Environmental Health at 423-209-8110. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.

81 Hong Kong Chinese

8652 East Brainerd Road

Reasons including upon arrival, both handwash sinks observed dry and with dust accumulation inside basin. When I asked the owner where she washed her hands she stated they had just opened (active food preparation observed). Then the owner stated that she may have washed her hands at the three compartment sink which contains no soap or paper towels for hand-washing. Several items in walk in cooler are not properly date marked (cooked chicken, raw chicken in stainless bowl). Additionally, chicken in two-door reach in owner stated was made “a few days ago” was not date marked and sweet and sour pork in the one door domestic unit was not date marked. Upon arrival, approximately 30 lbs. of chicken is observed thawing on table in back area. Cardboard used to cover food in reach-in unit. Food accumulation/debris observed throughout kitchen on refrigerator handles and gaskets. Grease accumulation on equipment.

81 IHOP

2047 Battlefield Pkwy., Fort Oglethorpe, Ga.

Reasons including employee touching raw foods then touching ready-to-eat foods without washing hands and changing gloves. Food-contact surfaces were not clean to touch when drying. Person in charge put soiled items back into dirty dish area and discussed proper cleaning methods with employees. Food items cooling with a lid that was insulating heat. Person in charge removed lid and took food item to the freezer to make sure the item got down to temperature. Inspector observed several pests during inspection.

Reasons including sanitizer at dish machine 0 ppm chlorine. Fried rice holding at 127*F at wait station. Must be held at 135*F or above. Time not properly recorded for sushi rice held under time control according to written policy. Frozen foods thawing at room temperature. In-use utensils stored in standing water. Dish machine dirty inside. Some non-food contact surfaces dirty. Walls/floors dirty behind/underneath equipment. Walls around triple sink not easily cleanable.

Reasons including employees not washing hands in between tasks. Black beans cooled 24 hours previously temping 55*F. Embargoed 10 lbs. of black beans. Covered correct cooling procedures with PIC. Bottom of reach in cooler with pooling water. Cutting board heavily scarred. Multiple nonfood contact surfaces dirty. Dirty shelving in walk in cooler. Walls and floors dirty. Floor tiles in poor repair.

405 N. Main Street, LaFayette, Ga.

Reasons including multiple containers that were not cooling uncovered in reach in cooler. Washing equipment not functioning according to the manufacturer’s instructions. Repair for the equipment is needed. Observed several items without date marking labels in reach in cooler. Shelving and cooler doors with excessive debris build up. Floors and walls in the the kitchen with excessive grease build up. Back door to the kitchen did not close on it’s own and was vulnerable to pests.

Reasons including raw chicken stored above beef in walk-in cooler. Raw foods must be stored according to minimum internal cooking temperatures. Sanitizer at dish machine 0 ppm chlorine. No sanitizer present in triple sink sanitizing compartment. In-use utensils stored in standing water. Single service products stored on floor. Ice build-up noted in walk in freezer unit. Shelving lined with absorbent materials. Must provide a durable, non-absorbent, easily cleanable, and washable material. Designated areas not provided for personal items.
