Best and worst restaurant inspection reports for the week ending Sept. 28, 2021

The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

Reasons including person in charge lacking control over food safety risk factors. Raw chicken stored over wontons. Raw chicken stored over raw beef. Dish machine at 0 ppm. No sanitizer bucket set up. Food items items such as baby corn, mushrooms, and sprouts being held out of refrigeration. Rice scoop held in room temp standing water. Multiple pieces of equipment in poor repair – cracked gaskets, broken food containers, and damaged lids. Wall behind dish machine in poor repair. Build up under cook line. Employee drink in food prep area.

Reasons including country ham stored over hash browns in reach-in cooler. Foods cold holding above 41 degrees in cooler drawer at chicken breading station. Chicken was at 50-58 degrees Fahrenheit . Dumplings and cooked chicken hot holding below 135 degrees in steam table. Foods ranged from 80-92 degrees Fahrenheit. Women and mends restroom air exhaust has excessive dust buildup.
