Best and worst restaurant inspection reports for the week ending Oct. 26, 2021
The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

5032 Ooltewah Ringgold Road
Reasons including person in charge does not demonstrate control over foodborne illness risk factors at time of routine inspection. No observation of handwashing from establishment employees throughout routine inspection. Handsink in corner of establishment by reach in cooler not working. Handsink by ice machine used for storing cloth rags and plastic. Inspector observed rodent droppings in bottom of handsink when cloth rags and plastic was removed from handsink. No soap or paper towels observed at handsink by ice machine. Bag flour stored near reach in cooler showing rodent activity. Flour packaging contains multiple rodent chew marks. Sliced steak left out to cool at room temperature. Rodent droppings present in various areas of establishment. Rodent urine smell present in some areas of establishment.

Reasons including active managerial control over foodborne illness risk factors not provided at time of inspection. Employees consuming food products in kitchen/prep area. Employees consuming beverages from unapproved containers. No paper towels provided at hand basin by freezer unit. Beer cheese re-heated to 135*F for hot holding (3 hrs.). Cole slaw holding at 46*F in low boy unit on cookline. Diced tomatoes holding at 46*F. Must be 41*F or below. Proper disposition of cooked meatballs not provided in walk in cooler.

Reasons including worker did not properly wash hands before putting gloves on at kichen line. Beef, beans, pork and tamales not properly date marked and held overnight. Multiple foods in walk in and reach in not covered. Dishes wet nested. Rusted Racks in dishwasher area.
9469 Bradmore Lane
Reasons including observed raw animal products stored over ready to eat foods in multiple locations. Cooked roast beef ROP vacuum packed in reach in cooler. Cooked roast beef not in approved HACCP plan. Head chef explained to inspectors ROP cooked roast beef was a “sample product” for butcher shop next door. Vacuum sealer must be used for approved items in HACCP plan. Will contact Dept. of AG regarding restaurant establishment and Butcher shop making and sharing sample products. Chicken wings and cooked ground beef observed cooling at room temperature upon inspector arrival. Person in charge stated they both had been cooked “20 min ago.” Products temping at 72-85F. Cooling at room temperature is not approved. Observed dishes stored wet. Observed tongs on cookline stored in sanitizer on floor. Multiple cutting boards in poor repair in food prep area. Dust accumulation observed on fans in walk in and on racks near dishmachine.
